Vegetable Fried Rice | Chinese Fried Rice

Vegetable fired rice or Chinese fried rice is delicious Indo Chinese recipe. These fried rice are made with veggies. If you want to make it gulten-free then you can use gulten-free soy sauce.

Ingredients

For Cooking Rice

  • 1 cup basmati rice or long grained rice
  • Water 4.5 cups
  • Salt as required or 1/2 teaspoon
  • Vegetable oil or cooking oil 2-3 drops

Other Ingredients

  • Finely chopped spring onion whites 1/4 cup (scallions)
  • 1/4 cup finely chopped carrot
  • Finely chopped cabbage 1/4 cup
  • 1/4 cup finely chopped french beans
  • Finely chopped mushroom 1/4 cup
  • 2 teaspoon finely chopped celery
  • Capsicum 1/4 cup finely chopped (bell peppers - green , red, and yellow)
  • Small sized 3-4 finely chopped garlic
  • 1/2 inch finely chopped ginger
  • 3 teaspoon soy sauce or add as required
  • 1 teaspoon vinegar or rice vinegar
  • 1/2 teaspoon black pepper powder
  • star anise (chakri phool)
  • 2 tablespoon oil
  • salt as required

For Garnish

  • 2 tbsp finely chopped spring onion greens

Process

How to cook rice for fried rice

  • Rinse the rice thoroughly until the water is clear of starch. Soak rice in water for 30 minutes. Drain and keep aside.
  • Take a pot or any utensil in which you want to boil the rice, add 4.5 cups water, salt and 2 drops of oil. Bring to gentle boil.
  • Now, add drained rice into the hot water.
  • Cook the rice on medium heat or flame. Do not cover the pot with lid.
  • Check the rice in between. When the rice just cooked, off the flame and drain the rice.
  • Cover the rice and keep the rice aside till it cools down completely.

How to make fried rice or Chinese fried rice

  • Take a pan or wok, add oil and heat it up.
  • Add star anise, fry it for some seconds (30-40 seconds).
  • Now, add finely chopped garlic and chopped ginger. Saute them for 1 minute.
  • Add spring onion whites. Saute it for 2 minutes.
  • Now, add all finely chopped veggies (celery, carrot, capsicum, cabbage, beans, and mushroom). Stir fry the veggies on medium flame.
  • Continuously stir the vegetables and uniformly cooked the veggies. Make sure do not burnt the vegetables.
  • Now, add soy sauce, vinegar, black pepper powder, and salt. Mix well.
  • Add boiled rice. Stir fry for 2-3 minutes until sauce has coated the rice.
  • Transfer rice into serving plate.
  • Garnish with spring onion greens.
  • Serve vegetable fried rice plain or with Indo Chinese vegetable gravy.
  • Delicious vegetable fried rice or Chinese fried rice is ready to serve.

Tips

  • To stop cooking process you can rinse the boiled rice with water. So that they do not stick with each other.
  • Chop beans very finely because they take more time to cook.
  • keep in mind soy sauce already has salt so keep a check while adding salt.
  • You can also add your choice of veggies.
  • If you like sweet taste in vegetable fried rice then you can also add tomato sauce.
  • You can skip celery if you do not have but celery give a real Chinese taste.
